Happy New Year, Everybody!
For NYE this year, my sister booked some rooms at a hill country resort a few hours north of our home town in Canyon Lake. We didn’t think that it would be this cold, so when we saw the forecast, we decided to change up our theme. Instead of doing our usual “get dressed in gold or silver,” we decided to go with matching shirts and pajamas. It worked out because since I had to work on NYE, we drove up to the resort late. By the time we arrived, it was time to prepare dinner — which we did. We had crispy pata (fried pork belly), fried fish (pompano), sotanghon soup (noodle soup w/ chicken), chicken wings, some dessert, and a lot of wine! I say a lot of wine because after dinner, we decided to have a few drinking games before the countdown.
On New Year’s Day, we ventured out to the rest of the resort, which is probably more amazing during the summer because of the lake and other amenities that are better when it’s the usual hot Texas weather. Since we were only a few miles away from the San Marcos Premium Outlets, we decided to check it out before having dinner. We ended up hitting up our favorite spots: Steve Madden, NY&Co, Nike, Burberry, Gucci, Ugg, Tory Burch, etc before hitting up a local Ramen place called Toro — which I give two thumps up for because their rich chicken ramen, poke, fried squid legs, gyoza, and fried tofu = deliciousness!
After that, we retreated back to the resort and had more drinking sessions — this time, without the games. We just sat around and had a chit chat session, reminiscing about old times while the kids played hide and seek. Family time is always fun time, so it was perfect. Today, we plan on going to Austin and San Antonio because tomorrow, we head back home and it’s back to reality with work and school and life responsibilities!
